One of the requirements of the Healthy, Hunger-Free Kids Act is to reduce the sodium content of school meals gradually over a 10-year period. An initial reduction in sodium took effect on July 1, 2014; the second is to take effect July 1, 2017. Because of uncertainty surrounding the implementation of "Target 2" requirements, many school food authorities and food manufacturers have much to be done before the increased sodium restrictions can be met. For this reason, USDA has instructed state auditing agencies to not impose fines on SFAs working toward but not yet in compliance with the guideline. You can download the full policy memo below.
Our executive chef, Registered Dietitian and Menu Analyst are currently evaluating all of NutriStudents K-12 menus in light of the Target 2 sodium requirements to determine how they may be impacted. It is our intention that menu weeks that may not currently meet the increased restrictions will be updated to meet the guidelines and be ready for use in the fall. We will keep you updated.
